One of the chambers holds five monolithic basins carved from single blocks of stone—a rare technical detail that makes this mill unique across Apulia. Completing the complex is a deep well connected to the aquifer, featuring an ancient rock-cut ladder for maintenance.
Underground mills were true “green gold mines”, designed to maintain a naturally constant temperature ideal for processing and preserving olive oil. Many were built over ancient Messapian granaries or Byzantine crypts, and this complex fits into that tradition.
